Delicious banana cake with chocolate and nuts

“Life’s to short to say no to cake”

Autumn has arrived here in Denmark at least. For me, that means lots of indoor cozyness with candles, people I love and not least CAKE! There is almost nothing better than having been out for a good long walk in the cold, then coming home with fresh red cheeks, and sitting down on the sofa with a cup of tea and a piece of freshly baked cake. It’s just so cozy, and something that I think only belongs in the fall / winter. I actually do not have the world’s biggest sweet tooth, even though I grew up in a family who absolutely loves cake and sweets,, and with a big sister who is incredibly good with anything that has to do with cakes and desserts 😉 However, I always like a piece of homemade cake, and especially if it’s a really good one!

~ Recipe for the banana cake ~

Below is my recipe for a really delicious, almost confectionery-like, banana cake filled with chocolate and nuts. It is easy to make and you can find all the ingredients in a normal supermarket. The recipe is strongly inspired by Anima’s recipe on Vegan banana cake. Of course, I was wearing beautiful autumn set from McVERDI, when I was baking a banana cake for my colleagues at the McVERDI office. I wore a cosy terracotta-coloured skirt in corduroy, a beautiful checkered blouse in viscose and wool, and in my hair, I had tied a curry-yellow silk scarf from Privatsachen.

~ Ingredients ~

  • 200 g. flour
  • 2 tsp. baking soda
  • 1 dl. neutral oil
  • 4 small or 3 large bananas
  • 100 g. Brown sugar
  • 130 g. Cane sugar
  • 1 tsp. fine salt
  • 2 tsp. vanilla powder
  • 2 tsp. cinnamon
  • 1 tbsp. vinegar
  • 150 g. Dark chocolate
  • A small handful of chopped nuts (I used almonds)

~ Instructions ~

  1. Step: Mix all the dry ingredients together
  2. Step: Add oil vinegar and mashed bananas to the mixture
  3. Step: Stir the dough well with a whisk or electric whisk
  4. Step: Mix in chopped chocolate and nuts

A banana cake without milk and eggs

This banana cake doesn’t contain dairy products and eggs, which actually makes it a vegan cake. But do not worry, you should not fear at all that it tastes neither of dust nor grass, even though it is vegan. In all its simplicity, it is incredibly delicious and tasty, and all my colleagues here at McVERDI agree, as they absolutely love it! So this cake can be made for both the vegan, the lactose intolerant or just for anyone who loves homemade cake, which tastes unbelievably good.
